What is grill shortening?? (Texas Roadhouse)?

I have celiac disease and had eaten Texas Roadhouse today and felt a little uneasy after, anyway I looked up online and they said if you order something grilled(which I did) you need to ask to have it made without grill shortening…what is grill shortening?? I also had seasoned rice which is also said to not be gluten free..what is in Rice there that would make it not gluten free?

I am the executive chef of four restaurants that just implemented gluten menus last year.

Rice IS gluten free, but they probably put something in the rice that ISNT gluten free. This could be anything from “natural flavors” to “hickory flavor” to “caramel color”…. The possibilities are endless.

Grill Shortening is literally a large brick of animal fat that they use on a flattop (griddle,) to cook items. It is not gluten free, but I don’t know why a typical soybean oil or a canola oil is not being used, as grill shortening is full of trans fats and absolutely disgusting.

I dont know why there would be grilled items going into this grill shortening, but I read it was the Texas Roadhouse. That place is not exactly the spitting image of “good restaurant.” Stay away from that shit hole…
