How much vital wheat gluten?

I am trying to bake whole wheat bread, and, not surprisingly, it came out very dense. I heard that you are supposed to add vital wheat gluten to correct the problem. The box said 4 tsp/ loaf but I have also heard 1 T/ cup flour. How much are you supposed to use? Does anyone have a good 100% whole wheat recipe that rises well that doesn’t require a bread machine?

Ok home made whole wheat bread is a very dense loaf. Yes that is correct 1 tablespoon of vital wheat gluten per 1 cup of flour . I love to make bread. How do you feel about white wheat flour? what brand of flour are you using? I am a flour snob and I ONLY use king arthur. I know it sounds awful but it is true. I have found that it make a superior loaf it Has NO chemicals or processing of any kind. Other than being ground up. You can get it at the big MARt store as well. Technically no recipe has to be made in a bread machine, the only thing is you have to watch how much liquid that you add so you can still handle the dough. Have you ever been to Kingarthurflour.com they have a ton of recipes that are very tasty. When I made whole wheat bread I use 50 -50 whole wheat and white wheat and that makes for a far better bread. I do my mixing in a kitchen aid and finish kneading by hand.
about 3-5 minutes. also if you crush up a vitamin C tablet and use a large pinch which is about 1/4 of the tablet this will improve the bread as well. Or you can mix all of the water and 1/2 of the flour and let it sit over night this will allow the flour time to absorb the liquid and the bread will be better as well

Ok so i am wondering what type of foods have gluten in them, and what type of Vegan foods dont have gluten?

and do have gluten in them thanks for the help?

Rice alone is gluten free. However, sometimes crackers and other products will contain gluten ingredients from other grains. I try to eat as gluten/grain free as possible as it affects my sinuses and weight immensely. Vegan foods that don’t have gluten: Garden Burger brand black bean burgers, tofu, rice crackers (check labels because a few brands are not vegan, these are great with tapenade and dips), corn chips, gluten free waffles from the frozen section (look for the vegan one), EnviroKidz Organic Cheetah Crispy Rice Bars (Berry), Tofutti Sour Cream and Cream Cheese (get the non-hydrogenated ones from health food stores), Marys Gone Crackers….just to name a few. Vegan items that DO have wheat/gluten includes almost everything else. Seitan is pure wheat gluten, mostly all of the faux meat products that are vegan are made with gluten like the deli slices an Tofurkeys and Field Roasts that are good at Thanksgiving. A lot of packaged mixes contain flour like gravys and dips. Mostly all items with any substance that are on a shelf for vegans is not gluten-free. I think it’s going to take another few years until there is a good variety. Even most soy sauces have wheat in them and barley and oat also contain gluten.

I like to make stir frys with broccoli, bell peppers, Braggs (gluten free soy sauce), a little oil, a little pineapple juice, salt, pepper, maybe a yellow squash and any other veggie you can think of with some tofu and steamed rice. Another thing you can pick up is those rice paper wraps from asin supermarkets (round and some have wheat so read the label). You can use those to dip in a large bowl of hot water and wrap it up with raw veggies and a strip of baked or fried tofu and dip in peanut sauce. Almost-raw, vegan, gluten-free meal to some foodies. If you exlcude the cooked tofu, it is considered by some to be raw because I don’t think the rice paper is technically ever cooked even in processing. And if you make the sauce from raw cashews, braggs and raw garlic and lemon you have a raw sauce too! Your digestive system will thank you for the all the womderful live enzymes that will break the food down faster than a cooked meal which creates more energy as opposed to most cooked foods that create lethargy.

A lot of the vegan soy yogurts are pretty good and gluten free as far as I’m aware.

Obviously there are a lot of beers out there that are not even vegan, let alone gluten free. They are made from hops which come from the wheat family, so beer is like liquid wheat. There are ciders however which I believe are vegan and wheat free and a good alternative if you’re trying to be gluten free and still do the beer thing with friends or something. Wine is gluten free but not always vegan or kosher.
